It just doesn’t seem right. Bubba’s with beer. Worse, swapping out one of those hustlin’, truckstop diner gals for a wine steward who can suggest the correct vintage perfectly mated to cut the grease on your BBQ rack o’ ribs. Other than being the only place left in Jackson where a gentleman might be addressed as “hon’” without that gentleman getting kicked in the shins by his wife, some of Bubba’s charm lies in the fact that it’s OK to waltz in the joint and plop down a 12-pack of Schaefer right there on the table next to the squirt tube of secret sauce.
The markup on hooch is too juicy to ignore.
The plan is to build out Kim’s office behind the front cashier counter and make that the dispensing room. No word on where Kim will then make out next week’s server schedule. The council granted Bubba’s their first liquor license and another piece of old Jackson crumbled into Flat Creek out behind the dumpsters.

The Council voted to accept the bid of Evans Construction for $79,761.50. Money has already been laid out to Meridian Engineering for mechanicals. After the bulbouts and curb cuts, Pathways head Brian Schilling told the Council the project would require an additional $20,370.25 from city coffers that aren’t exactly cha-chinging like they were last summer.
Councilmen made themselves feel better about spending money by grilling Schilling on the type of grass seed that would be used (Bob Lenz) and whether the sidewalks would be ‘powered’ (Greg Miles).
“This is a great opportunity for the town to save money and get something done. This has been a problem for 30 years,” said Friends of Pathways ED Tim Young.
Later, when rubber-stamping a new alliance between Pathways-City-County called the Pathways Stewardship Partnership, Mark Barron complimented Young. “Your organization has been steadfast – at times a little narrow-focused – but indefatigable, and I have a lot of hope for this agreement,” the mayor said.

Joe Rice is throwing in with several local investors to revamp the former Chef’s Table property into an upscale late-night restaurant. Blog traffic suggests the place will be called “Ignite,” and will bill itself as a “sexy eatery and lounge” with killer martinis.
Council members didn’t care what would be on the menu. They wanted to know how the applicant arrived at a figure of six for full time employees. Presenter Shawn Hill explained parking would be shared with businesses that closed by five o’clock, when the restaurant opened, and the Housing Authority was cool with the figure believing it would not take more people to run Ignite than it did to run Chef’s Table.
The housing mitigation was amended. And again, Jackson changes. Where once barflies could sober up on the cigarette smoke at a greasy spoon called LeeJays (now Burke’s Chop House), they can now hit on cougars over an appletini at the valley’s version of Tau.
Jackson’s Hole“Can we get them to remove the temporary covered walks at McCabe Corner so we can get some parking back? They aren’t doing anything over there,” said Mark Orbinger of the stalled Community Trust hole in the ground at Glenwood and Gill.
“I have it on good authority that they are going to start in mid-August,” Lenz answered.
“Well I have it on good authority they have financing now but no pre-sales,” Obringer shot back. JHW
