Organic specialty meats from Cosmic Apple
If you thought Cosmic Apple Gardens was just another organic farm that
offered shares of fresh fruit and veggies in the summer, think again.
The Victor, Idaho, -based Community Supported Agricultural operation,
owned and operated by partners Dale Sharkey and Jed Restuccia, also
sells a variety of organic, locally raised meats.
“For years, we’ve been doing a lot of specialty sausages,” Sharkey
said. “The past few years they’ve been available at Barrels ’n’ Bins,
Victor Valley Grocery and Hungry Jack’s.”
With five different types of sausage, there’s something for everyone.
Grandpa Restuccia sausage, based on Jed’s grandfather’s recipe, is a
classic Italian pork sausage seasoned with fennel and black pepper.
Hot Italian is a spicy version of a classic pork sausage. Maple sausage
is a sweet, yummy sausage that is a kid pleaser, according to Sharkey.
Chorizo is a classic Mexican recipe with a zesty, juicy, fresh paprika
flavor. Finally, Cosmic Apple offers a breakfast sausage, served as
patties, with sage and a special blend of peppers.
“Right now, all the pigs are from our farm,” said Sharkey. “The beef is
from a farm in Twin Falls.” Cosmic Apple also sells bratwurst, hot
dogs, pepperoni and salami, all made from beef. Either way, when you
buy these products, you are helping another small, organic family farm.
“We have been raising pigs and beef for five years,” Sharkey continued.

Eleanor’s: just a bar
Eleanor’s Cuvee has temporarily closed its kitchen and probably will
not reopen it until after the off-season, in late May. The bar is still
open six nights a week, with live music on four of those nights.
Owner Gayle Kinnison passed away in December, which prompted the
temporary suspension of food service. The restaurant and bar remains in
the Kinnison family.
Rhett Thorburn, general manager, noted that Eleanor’s would likely
undergo some changes in the coming months, but assured that the food is
not gone forever.
Jackson co-op on the way?
Deep Roots Community Co-op invites the community to an informational
meeting to discuss a co-op in Jackson Hole 6:30-8:30 p.m. on Tuesday in
the Teton County Library Auditorium.
The group posted a survey in various locations around town to gauge
interest. Questions included whether residents felt a need for a co-op
in town, what residents’ top three concerns were when buying food, and
how residents would be able to support a co-op, etc.
Tuesday’s meeting will build on the results of the survey.
