Food News: JH Roasters joins elite ranks with new machine

Jackson Hole Roasters is about as unpretentious, unassuming and down-home as you can get in Jackson Hole these days. You can walk in, drop $1.50 into the honor box, and pour yourself a cup of delicious coffee, which was roasted on site.
But on Monday, the coffee shop that is known as much for its beans as for its honor box will step it up a notch, adding a new drip coffee machine that has been written about and praised from coast to coast.
The Clover 1s, developed by the Coffee Equipment Company out of Seattle, Wash., is the cutting edge of drip coffee. The sleek machine, which first hit the market in 2006, allows baristas to brew individual cups of coffee and to adjust the water temperature, dose, grind and contact time based on the particular type of coffee.
Clover’s Web site describes the process: “Clover delivers the exact dose of water at the temperature you’ve chosen. Stir and wait while the coffee steeps. At the end of the set time, Clover’s piston rises, creating a vacuum that draws the coffee through the grounds.
The piston will then descend and deliver the coffee into your customer’s cup.”
It takes a bit more time than the average drip coffee customer is used to, but far less than the time you “extra hot low-fat vanilla latte” drinkers out there spend waiting for your espresso drink.
The Clover 1s costs a whopping 11 grand, though Jackson Hole Roasters owner Jack Malia said he got a good deal on the machine. There are fewer than 100 Clovers in operation throughout the country, making them a “rare commodity,” according to Malia.
But most importantly for Jackson Hole Roasters and its patrons, the Clover 1s provides the discerning coffee drinker the opportunity to drink the roasts he or she prefers, freshly brewed each time and with the air of a French press.
“I try to distinguish myself from the other [coffee shops in town],” Malia said. “We’re the only retail roaster in town. All of our coffee is very fresh.
“What Clover does is allows customer to sample any of the roasts that I have,” Malia continued.
Jackson Hole Roasters carries 10-15 different organic coffees at a time, but typically only has one or two are available each day in drip form.
“I’ve never had any complaints, but some customers like one coffee better than another,” Malia said. “With the Clover, they can sample any specific variety they want so they can make a decision about what kind of coffee they might want to buy by the pound.”
Customers who want to experience the Clover 1s’ magic can buy a cup (12 or 16 oz.) for about $2.75, or they can continue to buy the regular drip coffee for $1.50.
